We have lots of mini eggs left-over from yesterday and a birthday party today so I thought I'd make some chocolately cookies to take along to help Miss Jessica celebrate her 9th!
I used the food processor for speed...a mixer would be better,
You'll need
125 gms chopped butter
1/2 cup of soft brown sugar
1t vanilla essence
1 egg
a pinch of salt
2T cocoa powder
1 1/4 cups SR flour
mini easter eggs or choc chips would work
Cream together the butter and sugar then add a smallish real egg and the essence
Quickly blitz in the flour and cocoa powder and roll into walnut sized balls, press lightly.
If the mix is too sticky pop it in the fridge for 10minutes to harden slightly.
Bake for 12-15 minutes at 180C, just until they are firm and very lightly browned on the bottom
I split the Easter eggs along their join line and lightly pressed half an egg onto each warm cookie, they melted a little and once cool the egg is stuck tight. They look so pretty and I'm sure they'll be a hit today.
I've made coleslaw too and Gordie and Kristie have had chicken and rump steak marinating overnight to BBQ today. Our "party coleslaw" always has grated cheese in it too. Mum is bringing potato salad and the battalion of chocolate rabbits that she buys each year for her 6 great-grandchildren.
Totally irrelevant but here are 2 photos of Dad explaining cricket to Joe recently lol Kevin Petersen was going very well in Sri Lanka!
