Very windy here yesterday so poor old Twitch had to spend most of day inside...he doesn't look bothered does he? His big white belly is adorable!
Heather/Joybelle has posted a lovely recipe for a moist fruit loaf/cake at the forums which I am going to try very soon, it uses some mashed potato and I wonder if pumpkin could also be used, it does look very much like a scone recipe...
Potato Loaf Cake - tried and true
1/2 cup mashed potato
1/2 cup dried fruit
1/2 cup sugar
1 1/4 cups milk
2 cups SR flour
Mix all ingredients together. Bake in oven 180C for 3/4 hour.
I've run out of dried fruit so it will have to wait until Monday for shopping day!

ETA Cake was made with some lovely mixed dried berries and it even makes great toast. I think the top stayed white because I left a baking tray on the lower shelf of the oven.
