Feeling Better, Feeling the Love

what a difference a day makes indeed, I feel almost human again now. Would you believe that my lovely Dad, who has a cold himself, turned up this morning with 3 Lemsip pouches to make me feel better;I don't use things like that but was mighty touched by his love!
Sadly Vera phoned to say she is too frail to come home and will go to hospice at some point...I will miss her dearly.

Yesterday I had the brainwave to make Rhonda's new Chilli Jam recipe forgetting how strong the fumes are...I had to open every window and use both fans and air-conditioner AND a scarf over my lower face to avoid inhaling the fume! (shakes head)...I like this recipe as it uses red peppers which are cheap and plentiful at the moment...


  For lunch today I was craving eggs so mixed up a crustless flan thingy using less than half a cooked chicken breast, finely chopped red capsicum, 5 eggs and some sour cream...a little too brown as I was watching the French Open tennis at the same time...


I am a lazy gardener and throw my eggshells directly onto the garden beds where they dry out and get crunched under-foot...it looks like some enterprising crow has placed most of them in the bird bath to make them softer to eat...I had to laugh!...


For tea tonight I've made spag bol, India vs South Africa are playing in the World Cricket Cup...Nilanthi are your family following the fortunes of the Sri Lanken team?

Yellow

Today's post is brought to you by the colour yellow.

It's a glorious sunny day today and the sky is so very blue. I've just watched the Socceroos defeat Jordan 4-0, you can see from my link that they wear the Green and Gold of Australia with pride. This game was a qualifier to see who goes through to the final rounds of the World Cup in Brazil next year.
As I watched I finished a baby blanket I have been making from some of the yarn that Wendy sent me from Victoria recently...funnily enough the Brazil football team play in blue and yellow!


A yellow baby jacket finished yesterday...


a yellow poinsettia is flowering in the back garden...


a carpet of yellowy leaves under the deciduous cape lilac trees...


the first hint of yellow on a passion fruit...


 a nice ripe lemon...


duck eggs defrosting to make a quiche, this way you can save them when you have a glut and use them when your hens are resting...


pea and corn impossible quiche...


Not yellow but very sweet, Twitch comes to the front door when we get home to see what goodies there are for him, lettuce in this case! (Sorry about the evil plastic bags)


Priscilla updated her blog yesterday, you can follow the link on the right-hand side of this page and we got our tickets today. Woot. Starting to get very excited about our trip now.

Clayton's Quiche, The Quiche You Have When You're Not Having A Quiche!

A long funny title that stems from an advert for a lovely non-alcoholic drink made from herbs etc and called Clayton's Tonic....the drink you have when you're not having a drink! It was really lovely.

So then, my quiche is called a Clayton's Quiche because it doesn't have a pastry case, just 1/4 of flour forms a layer on the bottom and this method saves a lot of time and calories too ;)

You'll need

6 eggs
2 cups of milk/cream/yogurt/ricotta/cottage cheese, whatever you have is good
1/4 plain wholemeal flour
about 2 cups of quichie things such as chopped ham/bacon/tuna, finely chopped spring onion/capsicum/tomato/mushrooms, peas/corn, chopped fresh herbs are lovely too
1 cup of grated cheese

Beat the eggs and milks together
Stir in the flour and your meat and veggies and half the cheese and season well
Pour into a greased flan dish( mine is about 12inches/30cms in diameter)
Sprinkle the remaining cheese over the top and bake at 180C for 30-40 minutes, until the middle is set. If you leave it too long it will become rather rubbery (and that is not lubberly!)

We had a tasty simple salad of lettuce, tomato and capsicum with marinated feta and sundried tomatoes.

It must be Summer!



It fluffed up rather like a souffle but didn't have so far to fall...yummy!

38C is the weather forecast today, I think I'll nip to the shops as soon as they open as I need some olive oil to make Joe's special soap and Mum needs a cartridge for her printer too. I've just put Twitch in his outdoor 'playpen' and the baby doves are watching him with interest...he is NOT happy to be locked up!
