Baked Lentils, Baked Turkey and Baked Crumble

I have to share this easy and delicious recipe that I found here It's a nice site with lots of other good ideas.

You'll need...

1 cup of whole lentils...I mixed green and the French puys lentils which are small and almost black. Red lentils will turn to mush.

1 chopped onion
1 chopped garlic clove
2 T honey or maple syrup....I used one of each and the maple syrup really stood out
2 T olive oil
2T soy sauce
1/2 t grated ginger
a bay leaf
2 cups of boiling water
Salt and pepper

Simply mix everything together in an ovenproof dish and cover tightly.
Bake at 190C for 2 hours, stir and check that the lentils are tender...it may need a little longer.

I was already going to cook 2 turkey drumsticks which take the same length of time so I was getting the best use out of the oven too.

Place 2 turkey drumsticks in a roasting tin, meaty side down.
Cover with 1/2 cup of hot water, a sliced onions(spread out the rings), a chopped garlic clove, a tin of chopped tomatoes, a bay leaf, chopped parsley, basil and oregano and lots of pepper and a little salt.

Cover with foil and bake for at least two hours.

The meat, being dark, actually looks, smells and tastes like lamb and is a delicious and very economical dinner. It's best to strip the meat off the bone while it's still hot so that you can remove the skin and the sinews that run through it. Once I'd done that I put the bones etc into my biggest saucepan, covered them with water and made a rich tasty stock that I'll use today to make some soup.

a dinner plate full of tender meat for $5~~~~enough for 4-6 meals for us.
For dessert I sliced 2 ripe pears, covered them with the juice of 2 oranges and made a crumble topping with wholemeal flour, butter, sugar, rolled oats, shredded coconut and a teaspoon of ground ginger. It was so good with ice cream for Joe and Greek yogurt for me. Joe washed that very messy turkey baking dish for me too!

  3. The lentils are so delicious, you should have heard Joe when he tasted them! I suppose they could be cooked in the slow cooker too if you didn't want to use your oven.
