A very thrifty but still delicious meal, easy to prepare and very good re-heated the next day!
You'll need....
250gms macaroni, cook this while you make the sauce and drain it well
50gms butter
a small chopped onion
2 T plain flour
2 cups of milk
3/4 cup of grated cheese
1/2 cup of peas or corn kernals
2 level teaspoons of mustard powder or a dollop of French mustard
425gm Tuna, drained
salt and pepper
Gently fry the onion in the melted butter until soft.
Stir in the flour and make a smooth paste, cook for a minute or so.
Begin adding the milk and whisking to blend it....
.....when it's smooth and thickened add the mustard, 1/2 cup cheese, the cooked pasta, the vegs, tuna and S & P
Pour into casserole dish, top with remaining cheese and slices of tomato if liked,
Bake at 180C for 30minutes or until nicely browned......
