With 25C forecast for today I fancied a brown rice salad. I mixed together a variety of raw vegs, seeds, chopped nuts, brown rice and a few slivers of a cold lamb chop.
No real recipe but here's my ingredients to make 2 large serves.
1 cup cold brown rice
large chopped tomato
a sliced spring onion
1/2 cup each of chopped red capsicum and grated apple
1/4 cup each of chopped walnuts, chopped raw mushrooms, sprouted green lentils
1 T mixed seeds
Dressed with about a tablespoon each of lemon juice and extra virgin olive oil and half a teaspoon of grated ginger, sea salt and fresh black pepper. Bon Appetite!

ReplyDeleteI cannot find any mention in your blog entries as to what 5 seed mix you use. Could you tell us? Sarah
ReplyDeleteHi Sarah....the mix contains sunflower,pumpkin, flax/linseed, sesame and chia but you could use anything you have on hand. This sort of salad makes the most use of you have without going out to the shops.
